  • 4 large egg whites
  • 200 grams (1 cup) granulated sugar
  • 1 tsp vanilla extract
  • 360 ml (1.5 cups) heavy whipping cream
  • 110 grams (1 cup) raspberries
  • 125 grams (1 cup) blackberries
  • 135 grams (1 cup) strawberries, quartered or halved
  • Optional: mint leaves for garnish

Instructions

  1. Preheat your oven to 220 F (100 C).
  2. In a stand mixer, whip egg whites and a splash of lemon juice until frothy.
  3. Gradually add sugar while continuing to whip until stiff peaks form.
  4. Shape the meringue on a parchment-lined baking sheet into an 8-9 inch circle with higher sides.
  5. Bake for 90 minutes; let cool in the oven with the door slightly ajar.
  6. Whip heavy cream until soft peaks form, adding vanilla extract if desired.
  7. Prepare berries by mixing them with sugar and lemon juice in a bowl.
  8. Once the meringue has cooled, fill it with whipped cream and top with berries.
