  • 1 pound beef tenderloin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper (or to taste)
  • 1 tablespoon olive oil
  • ½ onion (minced)
  • 2 cups button mushrooms (finely chopped, about 7 ounces/200 grams)
  • 1 tablespoon soy sauce
  • black pepper (a generous pinch)
  • 1 teaspoon dried oregano
  • ½ cup pitted black olives (60 grams)
  • 1 pound puff pastry (450 grams)
  • mustard (to taste)
  • 1 egg (small, beaten)

Instructions

  1. Cut beef into 1-inch pieces, season with salt and pepper. Brown half in hot oil for about 1-2 minutes each side; set aside.
  2. Sauté onion and mushrooms in the skillet until softened, then add soy sauce and spices.
  3. Transfer mixture to a food processor along with olives; blend until smooth.
  4. Roll out puff pastry and cut into squares. Place mustard and mushroom mixture on each square, top with beef, fold corners over to seal.
  5. Brush with beaten egg and bake at 400°F (200°C) for 10-15 minutes until golden brown.
