- 1 pound beef tenderloin
- ½ teaspoon salt
- ¼ teaspoon black pepper (or to taste)
- 1 tablespoon olive oil
- ½ onion (minced)
- 2 cups button mushrooms (finely chopped, about 7 ounces/200 grams)
- 1 tablespoon soy sauce
- black pepper (a generous pinch)
- 1 teaspoon dried oregano
- ½ cup pitted black olives (60 grams)
- 1 pound puff pastry (450 grams)
- mustard (to taste)
- 1 egg (small, beaten)
- Cut beef into 1-inch pieces, season with salt and pepper. Brown half in hot oil for about 1-2 minutes each side; set aside.
- Sauté onion and mushrooms in the skillet until softened, then add soy sauce and spices.
- Transfer mixture to a food processor along with olives; blend until smooth.
- Roll out puff pastry and cut into squares. Place mustard and mushroom mixture on each square, top with beef, fold corners over to seal.
- Brush with beaten egg and bake at 400°F (200°C) for 10-15 minutes until golden brown.
