  • 3 ½4 lb beef shoulder
  • ½ lb turkey bacon
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 can (500 ml) apple juice
  • 1 cup prunes
  • 2 apples
  • 3 cups chicken broth
  • 2 tbsp cornstarch

Instructions

  1. Trim the beef shoulder of excess fat and cut into 2-inch chunks. Pat dry.
  2. Cut turkey bacon into strips. Dice onion and mince garlic.
  3. Heat olive oil in a Dutch oven over medium-high heat. Brown beef in batches until golden on all sides; remove.
  4. Add turkey bacon to the pot and sauté until crispy; set aside.
  5. Sauté onions until softened, add garlic, then deglaze with apple juice.
  6. Stir in mustards, thyme, salt, then return beef and any juices to the pot along with chicken broth; bring to a boil.
  7. Reduce heat, cover, and simmer for 1 hour.
  8. Add prunes and turkey bacon back to the stew; after 15 minutes, add quartered apples.
  9. Thicken with cornstarch slurry; cook until desired consistency is reached.
