  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 2 medium potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tbsp Worcestershire sauce (ensure it's alcohol-free)
  • Crusty bread for bowls

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear cubed beef until browned on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, sauté onions and garlic until translucent (about 3-4 minutes). Add carrots and potatoes; stir occasionally.
  3. Return the browned beef to the pot. Pour in beef broth and apple vinegar (if using). Add bay leaf, thyme, and Worcestershire sauce; stir well.
  4. Bring to a boil then reduce heat to low and cover. Let simmer for about 1.5 to 2 hours until meat is tender.
  5. While simmering, prepare bread bowls by cutting off tops of round loaves and hollowing out insides gently.
  6. Serve by ladling stew into each bread bowl.
