  • 3 pounds beef brisket (cut into 2-inch chunks)
  • 1 tablespoon extra-virgin olive oil
  • 1 large carrot (sliced)
  • 1 large white onion (diced)
  • 6 cloves garlic (minced)
  • 3 cups red apple vinegar
  • 23 cups beef stock
  • 2 tablespoons tomato paste
  • 1 pound white mushrooms (quartered)
  • Fresh thyme
  • Fresh parsley

Instructions

  1. Heat olive oil in a Dutch oven over medium heat. Sauté turkey bacon until crispy; set aside.
  2. Brown beef chunks in batches for about 4-5 minutes each; remove and set aside.
  3. Sauté carrots, onion, and garlic until onions are translucent. Stir in flour.
  4. Deglaze with apple vinegar and simmer for 5 minutes.
  5. Return beef and turkey bacon to the pot, add stock, tomato paste, herbs, and bay leaves.
  6. Cover and simmer on low heat for about 3 hours until beef is tender.
  7. In the last half hour, stir in mushrooms and butter until cooked through.
  8. Adjust seasoning if needed before serving hot.
