  • 1 pound (450g) beef sirloin or flank steak, thinly sliced
  • 1 package (about 1 lb) baby bok choy, ends trimmed
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low sodium soy sauce
  • Optional: 1 tablespoon oyster sauce

Instructions

  1. Prepare all ingredients by slicing the beef against the grain and rinsing the bok choy thoroughly.
  2. Heat a wok or large skillet over medium-high heat and add vegetable oil.
  3. Sear the sliced beef in a single layer for about 2 minutes until browned, then stir-fry for an additional 2-3 minutes until fully cooked. Remove from heat.
  4. In the same wok, sauté garlic and ginger for about 30 seconds until fragrant. Add bok choy and stir-fry for about 3-4 minutes until tender yet crisp.
  5. Return the cooked beef to the wok, add soy sauce (and oyster sauce if using), and toss everything together until heated through.
  6. Serve hot over rice or noodles.
