  • 2 medium sweet potatoes
  • 1 large yellow onion
  • 1 medium head broccoli
  • 1 pound boneless skinless chicken breasts
  • 1/2 cup BBQ sauce
  • 1 Tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chipotle powder or chili powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Peel and chop sweet potatoes into 1/2-inch chunks and onion into 1-inch pieces. Place on a lined baking sheet and drizzle with olive oil, salt, garlic powder, and chipotle powder. Toss and roast for 20 minutes.
  3. Toss veggies after 20 minutes; add chopped broccoli drizzled with olive oil and remaining salt to the pan alongside the chicken breasts coated in BBQ sauce. Roast for another 15–20 minutes until chicken is fully cooked.
  4. Shred the chicken using two forks, mixing it with additional BBQ sauce if desired.
  5. Serve by dividing the chicken and veggies among bowls while hot.
