  • 1 1/2 cups crushed vanilla wafers
  • 1/3 cup melted butter
  • 3 ripe bananas, mashed
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1/2 cup banana pudding mix
  • Sliced bananas for garnish
  • Additional vanilla wafers for garnish

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine crushed vanilla wafers and melted butter, then press into the bottom of a springform pan.
  3. In another bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well, then incorporate mashed bananas and vanilla extract.
  4. Whip heavy cream until soft peaks form and gently fold in banana pudding mix.
  5. Combine banana cream mixture with the cheesecake filling. Pour over the crust.
  6. Bake for 50-55 minutes until set but slightly jiggly in the center.
  7. Cool completely before refrigerating for at least 4 hours. Garnish before serving.
