  • 2 pounds boneless skinless chicken breasts
  • 3 ounces thinly sliced turkey
  • 6 cups fresh arugula or baby spinach
  • 1 cup cherry tomatoes
  • 1/3 cup toasted seeds (sunflower, pumpkin, sesame)
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 tablespoon olive oil
  • 2 tablespoons fresh chopped basil
  • 1 tablespoon fresh chopped oregano
  • Kosher salt + pepper
  • 1/4 cup olive oil (for dressing)
  • 1/4 cup balsamic vinegar (for dressing)
  • 2 tablespoons fresh chopped basil (for dressing)
  • 2 teaspoons Dijon mustard (for dressing)
  • Kosher salt + pepper (for dressing)

Instructions

  1. Marinate peaches in balsamic vinegar and honey for about 15 minutes.
  2. Toss chicken breasts with olive oil, basil, oregano, salt, and pepper.
  3. Preheat grill; grill peaches for 2-3 minutes per side until charred.
  4. Grill marinated chicken and turkey slices until fully cooked (internal temp of 165°F).
  5. In a salad bowl, combine arugula/spinach with tomatoes, grilled peaches, sliced chicken, turkey slices, and toasted seeds.
  6. Drizzle with balsamic dressing made from whisking remaining ingredients together.
