Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 cup cake flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 tablespoon cornstarch
  • 1 cup unsalted butter, room temperature
  • ½ cup granulated sugar
  • ½ cup dark brown sugar (packed)
  • 1 large egg + 1 egg yolk
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
  • 3 oz dark chocolate bar, chopped

Instructions

  1. Whisk together all-purpose flour, cake flour, baking powder, baking soda, salt, and cornstarch in a medium bowl.
  2. In a stand mixer, cream the butter until creamy. Gradually add granulated and brown sugars and beat until light and fluffy.
  3. Mix in the egg, egg yolk, and vanilla extract until smooth.
  4. Gradually combine the dry ingredients with the wet mixture on low speed until just combined.
  5. Gently fold in the chocolate chips and chopped dark chocolate with a spatula.
  6. Refrigerate dough for at least one hour (up to 24 hours) for thicker cookies.
  7. Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
  8. Scoop dough balls onto the prepared sheet about three inches apart.
  9. Bake for 15-18 minutes until edges are set but centers appear slightly underbaked.
