  • 1 1/3 cup refried beans
  • 1 1/3 cup salsa
  • 1 tablespoon chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 6 taco-sized flour tortillas
  • 3 tablespoons melted butter
  • 6 green onions (chopped)
  • 23 jalapeños (diced with seeds; adjust to your spice preference)

Instructions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine the chicken, refried beans, salsa, chili powder, cheese, jalapeños, and green onions until well mixed.
  3. Place a portion of the filling in the center of each tortilla. Fold up the bottom edge and then fold in the sides. Roll tightly to secure.
  4. Arrange seam-side down on a baking sheet. Brush tops with melted butter.
  5. Bake for 15 minutes; flip and bake for an additional 10 minutes until golden brown.
