  • 1 sheet frozen puff pastry, thawed
  • 12 tablespoons honey
  • 12 tablespoons fig preserves
  • 1 tablespoon fresh thyme leaves
  • Black pepper, to taste
  • 1 egg, beaten (for egg wash)
  • Optional: Coarse sugar for sprinkling, chopped walnuts or pecans

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry on a lightly floured surface until about 1/8 inch thick and place the brie wheel in the center.
  3. Score the top of the brie in a crosshatch pattern for flavor absorption.
  4. Spread fig preserves over the scored brie, drizzle with honey, sprinkle thyme leaves, and add black pepper.
