  • 1/2 cup softened butter
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 2 large apples, peeled and chopped
  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk or almond milk
  • Powdered sugar for glaze
  • 13 tablespoons of milk or cream for glaze

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. In a small bowl, combine light brown sugar and cinnamon for the sugar mixture.
  3. In a large mixing bowl, cream together softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, combine flour and baking powder; gradually add this to the wet mixture alternating with milk.
  5. Fold in the chopped apples mixed with granulated sugar and cinnamon.
  6. Spoon half of the batter into the prepared loaf pan, sprinkle half of the sugar mixture on top, then add the rest of the batter followed by the remaining sugar mixture.
  7. Bake for about 55 minutes or until a toothpick inserted comes out clean. Let cool before glazing.
