  • 2/3 cup granulated sugar
  • 1/3 cup light brown sugar
  • 1 1/2 cups all-purpose flour
  • 2 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup milk or almond milk
  • 1 3/4 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a 9×5-inch loaf pan.
  2. Mix together light brown sugar and ground cinnamon in a small bowl; set aside.
  3. Cream softened butter and granulated sugar in a large bowl until fluffy. Add eggs one at a time, mixing well after each addition, followed by vanilla extract.
  4. In another bowl, whisk together flour and baking powder; gradually incorporate into the wet mixture, alternating with milk.
  5. Toss chopped apples with additional granulated sugar and cinnamon in a separate bowl.
  6. Layer half of the batter in the prepared pan, add half of the cinnamon-sugar mixture and half of the apples. Repeat with remaining batter, topping it off with the rest of the cinnamon-sugar mixture and apples.
  7. Bake for about 55 minutes or until a toothpick comes out clean.
