  • 2 eggs
  • 1 cup fresh spinach
  • 1 cup diced sweet potato
  • 1 avocado, sliced
  • 1 tbsp pickled jalapeños
  • 1 tsp olive oil
  • Salt, black pepper & chili flakes to taste

Instructions

  1. Boil the eggs in water for 7 minutes; then cool in ice water before peeling.
  2. Preheat oven to 200°C (400°F). Toss diced sweet potatoes in olive oil, salt, and pepper. Roast on a baking sheet for 20-25 minutes until golden brown.
  3. Sauté spinach in a nonstick pan with olive oil for about 2 minutes until wilted.
  4. Assemble your plate: place sautéed spinach, roasted sweet potatoes, sliced avocado, and top with jalapeños.
  5. Serve warm and enjoy!
