  • 2 tablespoons cornstarch
  • 2 1/2 cups whole milk
  • 1 large piece lemon peel (including pith)
  • 1 large piece orange peel (including pith)
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (preferably caster)
  • additional sugar for caramelization
  • fresh fruit or berries for decoration (optional)

Instructions

  1. Heat the milk in a small heavy-based saucepan over medium heat with the citrus peels and cinnamon stick until simmering.
  2. In a separate bowl, dissolve cornstarch in a splash of water to make a slurry.
  3. Whisk egg yolks and sugar together until pale; add the cornstarch slurry and a splash of hot milk.
  4. Remove the spices from the milk and slowly combine it with the egg mixture while whisking continuously.
  5. Return to low heat, whisking until thickened to pudding-like consistency.
  6. Divide into ramekins, cover with plastic wrap, and chill for about 4 hours or overnight.
  7. Once chilled, sprinkle sugar on top and caramelize using a blowtorch or broil under high heat until golden brown.
  8. Serve topped with fresh fruit if desired.
