  • 34 lbs organic chicken, skin removed (drumsticks and thighs)
  • 23 Tbsps Jamaican green seasoning
  • 2 Tbsps Jamaican curry powder
  • 2 tsps On Everything All-Purpose Blend
  • 1 tsp sea salt
  • 1/2 tsp smoked paprika
  • 4 Tbsps Extra virgin olive oil
  • 2 Tbsps organic brown sugar
  • 1 can full-fat coconut milk (14 oz)
  • 2 medium russet potatoes, peeled and cubed
  • 2 medium carrots, peeled and chopped
  • 1 medium bell pepper, cored and chopped
  • 3 garlic cloves, minced
  • 2 tsps minced fresh ginger
  • 13 scotch bonnet peppers, to taste
  • 2 green onions, chopped
  • 2 sprigs of fresh thyme
  • 1 cup organic chicken stock, low-sodium
  • 2 1/2 Tbsps Jamaican curry powder
  • 1 Tbsp Jamaican pepper sauce
  • 1 tsp ground allspice
  • Sea salt and black pepper, to taste

Instructions

  1. 1. Marinate the chicken with Jamaican green seasoning, curry powder, sea salt, smoked paprika, brown sugar, and black pepper for at least 30 minutes.
  2. 2. In a large pot over medium heat, sauté minced garlic and ginger in olive oil until fragrant.
  3. 3. Add chopped bell pepper, onions, carrots, and potatoes; sauté for about five minutes until softened.
  4. 4. Incorporate the marinated chicken along with coconut milk, chicken stock, thyme sprigs, scotch bonnet peppers, allspice, and additional curry powder. Bring to a boil then reduce heat to low; cover and simmer for about 40 minutes until chicken is cooked through.
  5. 5. Adjust seasoning as needed before serving.
