  • 6 garlic cloves, thinly sliced
  • 1 piece ginger (3 inches), peeled and finely chopped
  • 1 bundle scallions (6 to 8 oz), thinly sliced (whites and greens separated)
  • 4 tsp kosher salt
  • Freshly ground black or white pepper, to taste
  • 10 cups water
  • 8 oz dried ramen noodles or dried curly noodles
  • 1 cup carrot, cut into thin matchsticks
  • 1/4 cup black rice vinegar
  • 1/4 cup soy sauce
  • 2 tbsp toasted sesame oil
  • Crispy chili oil, to taste

Instructions

  1. In a large pot, add the chicken thighs and cover with water. Stir in kosher salt and bring to a boil over medium-high heat.
  2. Once boiling, reduce heat to medium-low. Add garlic, ginger, and the white parts of the scallions. Season with pepper.
  3. Let simmer for about 20 minutes until chicken is cooked through and broth is flavorful.
  4. While chicken cooks, prepare noodles according to package instructions in a separate pot; drain when done.
  5. Remove chicken from the pot, shred using two forks, then return it to the broth along with matchstick carrots, cooked noodles, black rice vinegar, soy sauce, and toasted sesame oil.
  6. Serve hot in bowls topped with green scallion parts and crispy chili oil as desired.
