  • 1 small cooking apple (approx. 75g)
  • 55 g (1/4 cup) full-fat cream cheese, room temperature
  • 2 tbsp confectioners’ sugar
  • 175 g (1 3/4 cups) all butter shortbread biscuits (finely crumbled)
  • 100 g (3.5 oz) white chocolate (for coating)
  • 200 g (1 cup + 2 tbsp) white chocolate (melted)
  • ¾ tsp cinnamon

Instructions

  1. Peel and chop the apple into small chunks. Cook over medium heat with 1 tablespoon of water for 3-5 minutes until softened but not mushy; let it cool.
  2. In a mixing bowl, blend cream cheese and confectioners’ sugar until smooth.
  3. Stir in crumbled shortbread biscuits and cinnamon, followed by melted white chocolate and cooled apple chunks. Refrigerate for one hour.
  4. Form mixture into balls using heaped teaspoons and place on a parchment-lined plate, chilling again for 30 minutes.
  5. Dip each ball into melted white chocolate using a fork; allow excess to drip off before placing back on the tray.
  6. Sprinkle with cinnamon before refrigerating again for 30 minutes to set.
