  • 4 large apples (2 Honeycrisp and 2 Granny Smith)
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup melted butter
  • 2 tbsp cornstarch (dissolved in water)
  • 5 tbsp butter (for streusel)
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar (for streusel)
  • 1/2 tsp ground cinnamon (for streusel)
  • 1/4 cup melted butter (for icing)
  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla
  • cinnamon to taste (for icing)

Instructions

  1. Preheat your oven to 400°F. Grease a muffin tin with softened butter.
  2. Press each cinnamon roll into muffin cups, spreading dough up sides to create cavities.
  3. Prepare the apple filling by dicing apples and mixing with brown sugar, cinnamon, lemon juice, melted butter, and cornstarch mixture. Heat until thickened.
  4. Fill each roll cavity with the apple mixture using a slotted spoon.
  5. Prepare streusel topping by mixing all streusel ingredients until crumbly; sprinkle over filled rolls.
  6. Bake for about 15 minutes until golden brown. Cover loosely with foil during the first five minutes if needed.
  7. Make icing by whisking together the ingredients until smooth and drizzle over warm rolls before serving.
