  • 300 g all-purpose flour
  • 60 g granulated sugar
  • 1 tsp salt
  • 220 g cold unsalted butter
  • 110 g water
  • 1 kg apples (Pink Lady, Royal Gala or Fuji)
  • 75 g unsalted butter (for filling)
  • 190 g brown sugar
  • 1¼ tsp ground cinnamon
  • 1¼ tbsp cornstarch
  • 5 tbsp almond flour (or finely ground nuts)
  • Vanilla ice cream

Instructions

  1. Prepare the pie crust by mixing flour, sugar, and salt in a bowl. Add cold butter, blending until crumbly. Gradually add cold water until dough forms. Wrap and chill for at least 30 minutes.
  2. For the filling, peel and slice apples. Melt butter in a pan and cook apples with brown sugar, cinnamon, cornstarch, salt, and water until soft.
  3. Preheat the oven to 180°C (350°F). Roll out the chilled dough and place half in a baking dish as the bottom crust. Fill with apple mixture and cover with remaining dough.
  4. Brush with egg wash, sprinkle with almond flour and brown sugar. Cut slits in the top for steam to escape. Bake for 60-80 minutes until golden brown.
  5. Let cool slightly before serving warm slices topped with vanilla ice cream.
