  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 300 g granulated sugar (divided)
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 3 tbsp cornstarch (divided)
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Preheat the oven to 180°C (350°F). Peel and core the apples; slice thinly. Toss with 150 g sugar and salt; set aside.
  2. Layer the apple slices in a baking dish and bake for about 40 minutes until tender.
  3. In a saucepan, whisk together egg yolks, remaining sugar (50 g), 1 tbsp cornstarch, and salt. Gradually add milk while whisking continuously.
  4. Cook over medium heat until thickened; stir in vanilla bean paste.
  5. Assemble by layering baked apples and custard in serving dishes. Serve warm or chilled.
