  • 3/4 cup brown sugar
  • 2 tsp baking powder
  • 1 1/2 tsp ground cinnamon

  • 1/2 cup milk
  • 1/4 cup butter (melted)
  • Glaze: 2 tbsp powdered sugar
  • 12 tbsp milk

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with muffin liners.
  2. In one bowl, toss diced apples with cinnamon and a sprinkle of sugar.
  3. In another bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt until well combined.
  4. In a separate bowl, mix eggs, milk, and melted butter until smooth.
  5. Gradually combine wet and dry ingredients; stir gently until just combined before folding in the spiced apples.
  6. Fill each muffin cup about three-quarters full with batter.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. For the glaze, whisk powdered sugar with milk until smooth and drizzle over warm muffins.
