  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 Tablespoon ground cinnamon
  • ½ teaspoon ground nutmeg (optional)
  • ½ cup unsalted butter (room temperature)
  • ¼ cup sour cream (or Greek yogurt) (room temperature)
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • ½ cup milk (room temperature)
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)
  • ¼ cup packed light brown sugar
  • 2 Tablespoons granulated sugar
  • 4 Tablespoons (56 g) unsalted butter (melted)
  • 1 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together: ¾ cup all-purpose flour, ¼ cup packed light brown sugar, 2 tablespoons granulated sugar, and 1 teaspoon ground cinnamon (if using). Pour in 4 tablespoons melted butter and mix until small clumps form. Set aside.
  3. In another bowl, whisk together: 2 cups all-purpose flour, 1½ teaspoons baking powder, ½ teaspoon salt, 1 tablespoon ground cinnamon, and ½ teaspoon ground nutmeg (if using). Set this mixture aside.
  4. In a large bowl, use an electric mixer to beat together: ½ cup packed light brown sugar, ¼ cup granulated sugar, and ½ cup room temperature unsalted butter until light and fluffy. Add in 2 large eggs, ¼ cup sour cream, and 1 teaspoon pure vanilla extract, mixing until well combined.
  5. Add half of the flour mixture to the wet ingredients and mix just until combined. Then add ½ cup room temperature milk, mixing again before adding the remaining flour mixture. Stir just until combined, then fold in 1½ cups diced apples.
  6. Divide batter among prepared muffin cups, filling each about three-quarters full. Generously sprinkle crumble mixture over each muffin.
  7. Bake in preheated oven for about 20 minutes, or until a toothpick inserted into the center comes out clean with little to no crumbs attached. Allow muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
