  • 1 1/2 cups heavy cream
  • 1/2 cup granulated sugar

  • 5 large egg yolks
  • 1 cup apple butter
  • 6 tablespoons all-purpose flour

  • 1/4 cup light brown sugar
  • 1/4 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted)

Instructions

  1. In a large bowl, set aside 1 cup of heavy cream with a mesh strainer on top.
  2. In a medium saucepan over medium heat, combine the remaining heavy cream, whole milk, sugar, salt, and whisk until combined. Heat until steaming.
  3. Gradually whisk hot liquid into egg yolks to temper them, then return to the saucepan and cook until thickened.
  4. Strain custard into reserved heavy cream and cool over an ice bath.
  5. Blend custard with apple butter until smooth. Chill in the refrigerator.
  6. Preheat the oven to 375°F (190°C). Combine oatmeal crisp ingredients and bake for about 10 minutes or until golden brown.
  7. Churn chilled custard in an ice cream maker according to instructions, layering with cooled oatmeal crisp in a freezer-safe container.
  8. Freeze until firm before serving.
