  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 3/4 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup cold butter, cut into small cubes
  • 4 cups peeled, chopped fresh apples
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1/2 cup powdered sugar
  • 1–2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, oats, brown sugar, granulated sugar, salt, and cinnamon. Cut in cold butter until crumbly. Reserve 1½ cups for topping.
  3. Press remaining mixture into the pan and bake for 10–12 minutes until golden.
  4. In another bowl, combine apples with cornstarch, lemon juice, vanilla extract, and spices. Let sit for a few minutes.
  5. Spread apple filling over crust and sprinkle reserved crumb mixture on top. Bake for an additional 30–35 minutes until bubbly.
  6. Cool completely before cutting into bars.
