Ingredients

Scale
  • 4 boneless, skinless chicken breasts (6 oz each)
  • 1 medium Granny Smith apple, thinly sliced
  • 4 oz light Brie cheese, sliced
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp dried thyme
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp creamy Dijon mustard
  • 1 tsp whole grain Dijon mustard

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice each chicken breast horizontally to create a pocket without cutting all the way through.
  3. Stuff the pockets with apple slices and Brie cheese, then fold the chicken over to secure the filling.
  4. Season both sides of the stuffed chicken with salt, pepper, and thyme.
  5. Heat olive oil in a skillet over medium-high heat; sear each chicken breast for about 1-2 minutes on each side until golden brown.
  6. In a small bowl, whisk together maple syrup, creamy Dijon mustard, and whole grain Dijon mustard. Brush this glaze onto the top of the chicken.
  7. Transfer the seared chicken to the baking sheet and bake for 20-25 minutes until cooked through.
