  • 2 cups shredded zucchini (excess water wrung out)
  • 1/2 onion (shredded)
  • 2 eggs
  • 1 cup Panko bread crumbs
  • 1/2 teaspoon salt
  • 1 teaspoon fresh dill
  • 1 teaspoon parsley
  • 1/2 teaspoon mint
  • 1/4 teaspoon pepper
  • Oil (for spraying)

Instructions

  1. Preheat your air fryer to 370°F (190°C).
  2. Shred the zucchini and squeeze out excess moisture using a clean dish cloth or paper towel.
  3. In a mixing bowl, combine zucchini, onion, eggs, Panko breadcrumbs, salt, dill, parsley, mint, and pepper until well mixed.
  4. Form the mixture into eight equal patties.
  5. Lightly spray the air fryer basket with oil and place four fritters in it. Cook for about 10 minutes or until golden brown. Repeat with remaining fritters.
