  • 34 medium ripe tomatoes
  • 1 tsp kosher salt
  • 2 cloves garlic
  • 1 tbsp extra virgin olive oil
  • 2 tsp balsamic vinegar
  • 2 tbsp thinly sliced basil leaves
  • ground pepper to taste
  • balsamic glaze to taste (optional)

Instructions

  1. Combine chopped tomatoes, salt, and minced garlic in a bowl. Let sit.
  2. Pound chicken breasts to an even thickness.
  3. Brush chicken with olive oil; season with Italian seasoning, salt, onion powder, garlic powder, and pepper.
  4. For grilling: Cook on high heat for 5-6 minutes per side until internal temperature reaches 165°F. For baking: Roast in preheated oven at 400°F for 10-12 minutes.
